Hotel Bo

Born in Santo Domingo Tonalá, Oaxaca, to farming parents and family, Chef Víctor Hugo Olivera's greatest pride is knowing how to harvest.

It is at the LUM Restaurant of the Hotel Bö, in San Cristóbal de Las Casas, Chiapas, where his proposals today dazzle, with the combination of products, textures, aromas and ancient techniques, that Víctor was rescuing when visiting the communities of Los Altos de Chiapas , to understand the nature of each product. Since then, chefs of the stature of Gaby Ruiz, Elena Reygadas, Alfredo Villanueva, Manuel Baños, Roberto Solís, Jonatán Gómez Luna, Lula del Campo, the Rivera-Río brothers, Gerardo Vázquez Lugo, María Elena Lugo, among others; They have been attracted to his kitchen, located in a paradisiacal valley of eternal greenery, where with each of his creations a new and exciting contemporary Mexican gastronomic proposal begins to boil.
